Up To Our Ears In Tomatoes! Freezer Salsa Anyone?

Today is my second round of making freezer salsa, tomato sauce, and garden fresh pasta sauce. Not only do we have a bumper crop of tomatoes this year, but the in-laws have 3 different types of tomato plants that we’ve been tending to. They have been out of town for the past week, so we are having to pick and use up all of their veggies as well (not that I’m complaining).  I have worked on this freezer salsa recipe for the past couple of seasons and I must say, it is really delicious, even after spending months in the freezer. It is really versatile as well. You can make this salsa smooth (which my family prefers) or make a chunky salsa. And you can always make it as sweet or hot as you’d like it.

I use my freezer salsa as a base for red and green chili (which I make often in the fall and winter time) and other Mexican food dishes. I don’t really use the salsa recipe as a dip, but I’m sure it is fabulous that way as well.

Here is my recipe for easy freezer salsa:

Freezer Salsa

Ingredients

8 cups tomatoes diced
2 large onions diced
2 green peppers diced
2 jalapenos (I seeded one) finely diced
2 garlic cloves smashed
2 Tbs. sea salt
1 Tbs. ground black pepper
1 Tbs. garlic powder
2 Tbs. sugar
1 Tbs. cumin (or to your liking)
2 Tbs. fresh cilantro (or to your liking)
1/4 cup apple cider vinegar
juice of 1 lime

Chop all veggies

Combine all ingredients in a large saucepan.
Bring to a boil. Reduce heat and simmer uncovered for 45 minutes, stirring often.

Turn off heat and cool to room temperature.
Divide salsa into small freezer bags or containers.

NOTE: I forgot to measure how many cups this ended up making, but I figure about 10 cups or so.

Freeze for up to 8 months.

If you like a less chunky salsa, use a food processor to obtain your ideal texture after the salsa has cooled. Then proceed to divide salsa into preferred freezer containers.

Be sure to leave out a serving or two to enjoy with chips! This stuff is addictive!
